Mimosas with a little extra something {Perfect for a Special Sunday Brunch}

Mimosas always remind me of special Mother’s Day and Father’s Day brunches at our favorite go-to restaurant for brunch, Oystercatchers, overlooking Tampa Bay. Mimosas regularly topped up by our favorite server Karim, it seems that fresh sparkly citrusy bubbles go down very easily on a warm and lightly breezy Sunday morning. I made these for my better half this weekend to celebrate Valentine’s Day (with my Smoked Salmon and Scrambled Egg Parcels). Now I’m dreaming up our next celebration! This is my version with a dash of Grand Marnier. Key points: use good quality, sweet oranges. Chill juice, Champagne and glasses before serving.

1½ tsp of Grand Marnier liqueur per glass
Freshly squeezed sweet orange juice – Florida oranges, of course
Champagne or other good white sparkling wine (Preferably French or Californian)
Both in equal proportions

Chill the Champagne flutes in the freezer prior to serving
Pour 1½ tsp of Grand Marnier into each flute
Then top up with equal amounts of cold fresh orange juice and chilled Champagne
Sip under a palm tree overlooking the ocean
