Pea and Ham Soup

As the temperatures continue to dip, the soup recipes come out from their summer hibernation! This is so easy and simple I can’t understand why I don’t do it more often!


1 packet (10 oz) of frozen green peas – preferably organic – Fresh of course, works too
1 pint of chicken stock
1 small onion, chopped
1 tbsp of butter
Salt and pepper to taste
1/4 inch thick slice of ham cut into small cubes
1 tbsp of cooking oil

Melt the butter in a pan and add the chopped onion
Cook onion until it’s transparent
Add the peas, stir and add the stock
Cook for 5 minutes
While the peas are cooking, stir fry the ham until is almost crispy – you don’t want it too dry
When the peas have cooked, whisk them with a hand blender
Return to the heat and add more stock if you want – check seasoning
Serve into bowls and top with fried ham pieces
