Summer Salad {With Fig Infused Balsamic Vinaigrette}

 

With these summer ingredients at their peek right now, it’s time to liven up your mozzarella and tomato salad! Mix it up with more or less of whatever you fancy or omit the mozzarella all together. It takes only a few minutes to put together this bowl of bursting flavors!

SUMMER SALAD WITH FIG INFUSEDBALSAMIC VINAIGRETTE

Ingredients:
Ripe tomatoes, any kind
Firm cucumbers, any kind
Finely chopped cilantro
Mozzarella chunks
Avocado
A couple of slices of red onion
Pepper
Balsamic vinegar (I use fig infused)
Avocado oil (other oils will do also)

Instructions:
Chop the tomatoes, cucumber avocado and mozzarella into even sized pieces
Add finely chopped cilantro
Add finely sliced onion pieces
Add avocado
Serve topped with freshly ground pepper and a small dash of balsamic vinaigrette

Notes:
For the vinaigrette I use 2 quantities of oil to 1 of balsamic
